Bruwer Raats is a key figure in the new wave of South African winemakers, crafting soil-specific wines that embody the unique characteristics of the stunningly beautiful Stellenbosch region. “It is all about the right variety planted in the right place,” he says. And ever since 2000, that means Cabernet Franc and Chenin Blanc, and that’s it.
The grapes for this wine come from unirrigated 25-year-old bush and trellised vines grown in both decomposed granite and Table Mountain sandstone soils. Bruwer employs hand harvesting, whole bunch pressing and natural fermentation without fining or filtering.
