Sitting on the slopes of the Bottelary Hills, Stellenbosch, with panoramic views of Table Mountain, Table Bay and False Bay, Zevenwacht is a modern, family-owned estate with a 300-year history. Influenced by its proximity to the ocean and the cooling South-Easter wind, Zevenwacht makes distinctive terroir-driven wines with great fruit purity and elegance.
The Tin Mine White comprises of four grapes; Chenin Blanc being the dominant at 66%, with 25% Chardonnay, 5% Viognier and 4% Roussanne. All the fruit comes from south- to southwest-facing vineyards in the Polkadraai Hills ward of Stellenbosch, at altitudes between 200m to 350m. Soils are decomposed granite with varying amount of structure and clay in the subsoils. The wine spent 10 months barrel ageing on the lees for a richer mouth feel and underwent partial malolactic fermentation.
