Situated in Davayé, at the foot of the rock of Solutré, the Chavet family have 12 hectares under vine, 10 of which are in the appellation of St Véran. The current custodian, Christophe, is the sixth generation of Chavet's to manage this winery.
Saint-Véran is produced in two towns, Prissé and Davayé. From around thirty plots on clay-limestone soil made up of small orange pebbles called flint. It is on these south, south-east and relatively sloping soils that Chardonnay expresses all its character. This Chardonnay is yellow and gold in colour. Aromas of white flowers (peach, pear) with tones of hazelnuts form the freshness of the nose. The mouth is frank, intense, round, full of complexity with its mineral and tangy finish. This is best enjoyed as an aperitif but is a perfect pairing with shellfish, fish, and white meats.
